Shopping for Onions
Choose red or yellow onions that are heavy relative to their size, firm to the touch, and have smooth, thick skin. Avoid discoloration and onions that look like they are sprouting. Store yellow onions in cool, dry spot for up to three months; red onions only last two to four weeks. Wrap individual onions in foil if stored in the fridge to prevent their odor spreading to other foods. Lessen any tears by cutting onions with a sharp knife either under running water or after freezing for 20 minutes.
