For generations, kids and the young-at-heart have flexed their creativity carving Halloween pumpkins. More recently, cooks and bakers have transformed different varieties of the humble pumpkin into delectable dishes and baked goods. Canam Fresh supports this pumpkin makeover and proudly farms Jack o Lanterns, specialty, and pie pumpkins in Canada and the US.

    Shopping for Pumpkins

    For specialty and pie pumpkins, choose ones that weigh between four to six pounds, with a deep, rich tone, a firm rind that isn’t easy to press into, and no blemishes. Thump the pumpkin; if it sounds hollow, its ripe. Store in a cool, dry spot for no longer than four weeks. Remove the seeds and stringy flesh before steaming, baking, or roasting.

    For traditional carving pumpkins, let your imagination guide your choice of size and shape!

    Nutritional Info

    Specialty and pie pumpkins are nutrition superstars! Low-calorie, high fiber and loaded with beta-carotene due to its orange hue, pumpkins are rich in vitamins and minerals including vitamins B1, B2, B5, B6, B9 (folate), C, E, and K, plus potassium, copper, manganese, and iron. Pumpkin also contains B3, calcium, magnesium, phosphorus, and zinc. Maintain the healthy benefits of pumpkin by not overwhelming it with excessive sugar and simple carbs when using in recipes.

    Taste Profile

    In general, specialty and pie pumpkins have a similar taste and texture to winter squash—not overly sweet, though its sweetness will intensify with cooking or baking.
