    Shopping for Sweet Potatoes

    Select small to medium-sized sweet potatoes with firm, smooth skin. Avoid ones that are sprouting, soft, have bruises or blemishes, or are wrinkled. Store in a cool, dry, dark place (not the refrigerator) for up to two weeks. Sweet potatoes are not yams, which is an African tuber.

    Nutritional Info

    Sweet potatoes are very filling, so it’s no surprise they are high fiber. They are rich in Vitamin A—due to the amount of beta carotene—and Vitamins B1, B2, B3, B6, C, and E, as well as minerals manganese, potassium, pantothenic acid. Sweet potatoes also contain calcium, iron, magnesium, phosphorous, sodium, and zinc.
