Zero is a good thing when it comes to waste!

A big part of Canam Fresh’s commitment to sustainability involves working towards near zero waste. Based on industry standards, between 20 percent and 40 percent of every crop goes to waste, underscoring the enormous environmental, moral, and financial benefits of innovation.

How can we find ways to upcycle non-market ready crops or minimize other types of crop losses, so no veggie or fruit gets left behind? The standard answer turns unusable crops to livestock feed or fertilizer. Our partnership with imPASTA! Foods allows to find better ways by upcycling it into finished products using food science technology.

The imPASTA! Foods story

Before imPASTA! Foods, Canam Fresh left up to 60 percent of spaghetti squash crops on the ground. That 8.4 million pounds of scarred spaghetti squash represented a 1,000 tons in CO2 footprint and 116 million gallons of water, just in one season alone.

Spaghetti squash is an unusual vegetable. It’s softer skin makes it prone to scarring. Retailers do not purchase scarred squash—even though scarred squash is still perfectly edible. This underutilized vegetable is low-cal, low-carb, gluten-free, vegan, non-GMO and keto.

The imPASTA! Foods co-founders, in partnership with Canam Fresh, assembled a team of food scientists and perfected the imPASTA! (Canada) and Already Spaghetti (US) products: a ready-to-eat perfectly prepared ring of spaghetti squash.

Buoyed by the success of imPASTA!, Canam Fresh continues to collaborate with diverse clients to find other innovative ways to upcycle skin, seeds, and flesh that currently go to waste.
